S'MORE COOKIES RECIPE
Hey ya'll so yesterday was National S'more Cookie day and if you know me you know I LOVE S'mores, but these cookies may have S’more beat now. They are the best and all my friends I've made them for agree.
11 Tablespoons unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 teaspoon baking soda
½ teaspoon sea salt {I've used regular and they turn out the same}
1 teaspoon cinnamon
2 ½ cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows
3 Hershey’s bars, broken into pieces {I used the larger bars}
1-2 packages graham crackers {I used a box that already had them pre-squared & Honey flavor}
In the electric mixer bowl add softened butter with the white & brown sugar, mix until fluffy. Add eggs, vanilla extract & mix until combined.
In a medium bowl, mix together the flour, baking soda, salt & cinnamon.
Then add the flour mixture to step one & combine on low speed.
Fold in the chocolate chips and marshmallows.
Preheat the oven to 375 degrees. Line baking pans with parchment paper. {I had to use foil it cooked just fine.} I used a large cookie sheet but you can really use which ever size you want.
Lay out graham crackers side by side on the pans as close as possible {they should be touching} You may have to add or remove graham crackers depending on how much dough you have. We had some dough left over since so many crackers were broken in the package.
Place tablespoons of dough on graham crackers about 1 – 1 ½ inches apart. Press down slightly with fingertips.
Bake for 5 minutes then remove from oven to press Hershey’s bar pieces on to the top.
Bake for an additional 7 minutes or more until the edges a slightly golden brown. Move to a cooling rack. {I didn't the first & they stuck on the foil.}
